This easy-to-make French lemon salad dressing provides a tasty sauce for raw and cooked vegetables, and uses olive oil, lemon, mustard, and garlic.
When I grew up in France, my family cooked every day. Both my mother and father did. As I explain in Robustness, I spent several years living with one of my grandmothers, who used to have a restaurant. She made lunches every day as my mother was working. I could walk from school to the apartment in less than 10 minutes. Lunch was always ready on time for me to eat and walk back to school for the afternoon session. Salads usually had one of two dressings. The first is olive oil and vinegar, red or white, with a tiny bit of salt and pepper. The other one is this French lemon salad dressing recipe.
This French lemon salad dressing is great with raw or cooked vegetables
It’s very simple and quick to make, and uses only 4 main ingredients. The salt and pepper are optional. Also, you can use this dressing with many dishes. Lettuces, carrots, tomatoes, almost any raw vegetable is a good candidate. You can also boil green beans or carrots, and let them cool down after cooking. Then, add the dressing to the cooked vegetables. It’s equally perfect.

Ingredients
- 1 Lemon
- 5 Garlic cloves
- 1 tbsp French mustard
- 4 tbsp Olive oil
Instructions
- Cut the lemon and extract the juice using a squeezer. Gather the other ingredients.
- Crush the garlic, add the lemon juice and mustard, and blend. If you are using salt and pepper, add them as well.
- Mix in the olive oil. Adding it after the other ingredients allows it to better blend and have less separation between ingredients.
