Golden beet dressing (no oil)

This golden beet dressing makes for a refreshing and original dressing or sauce for salads, pastas, vegetables, rice without the use of oil.

Ingredients

  • 8 oz golden beets
  • 1 orange
  • 1 lemon
  • 4 tbsp white wine vinegar
  • 2 tbsp mustard
  • 4 garlic cloves
  • Salt

Instructions

  • Peel and boil the beets, or bake them.
    Boil the golden beets
  • In the meantime, squeeze the orange and lemon. Peel and crush garlic.
  • Once cooked, let the beets cool down in cold water for 5 minutes then strain them. Place them in a blender, add vinegar, citrus juice, mustard, garlic and salt. Blend well by alternating on and off modes.
  • Pour the dressing a serving cup, glass or container
    Puree the golden beets with other ingredients for dressing
  • Serve immediately.
