Cook the beets, ideally in advance, and store them in your fridge. On the same day, strain the cooked beets and place them in cold water for 2-3 minutes to cool down.
Rinse and slice the berries, slice the banana, squeeze the lemon.
Place beets, berries and banana in a large bowl, add the lemon juice, maple syrup and sprinkle with dry oats on top.
