Oil-free cucumber and sweet potato salad

This oil-free cucumber and sweet potato salad recipe is made with fresh garlic, lemon juice, French mustard, and a little bit of parsley.

Ingredients

Vegetables

  • 16 oz sweet potato (about 1 big sweet potato or 2 medium ones)
  • 1 cucumber

Oil-free dressing

  • 1 tbsp mustard (preferably French mustard)
  • 1 lemon
  • 2 tbsp parsley
  • 1 garlic clove
  • salt (optional)

Instructions

  • Peel and cut in bite-size pieces the sweet potato. Put in water and bring to boil.
  • Cook for 15 minutes until sweet potato bits are tender but not overcooked (mushy), then drain and rinse under cold water.
  • In the meantime, thinly slice the cucumber and place it in a salad bowl.

  • Oil-free French lemon dressing
  • Add the sweet potatoes, the dressing, mix well and serve immediately.

Notes

You can add a bit of ground pepper on top, hot sauce, and/or nutritional yeast.
