This soybean sprout salad with French dressing is an original take, a French-Asian fusion dish combining the sprouts with an olive oil and lemon sauce.

Ingredients

  • 12 oz fresh soybean sprouts Preferably organic, non-GMO
  • 2 green onions
  • 1 tbsp French mustard
  • 1 lemon
  • 5 cloves garlic
  • 4 tbsp olive oil

Instructions

  • Bring a large pot of water to boil then add the soybean sprouts. Let them cook for about 3 minutes until the water boils again and they are no longer firm.

  • Remove the water using a drainer.
  • Make the French salad dressing by mixing the lemon juice, adding the crushed garlic, mustard, and finally the olive oil.

  • In a salad bowl, place the soybean sprouts. Finely chop the green onions and sprinkle them on top. Finally, add the French dressing and gently stir.
