In general, I search for which dressing to pair with my salad. But tonight it was the opposite in order to make this kale cucumber salad with golden beet dressing.
I searched for which vegetables to pair with my golden beet dressing, and the lucky winners are cucumber and lacinato kale. Many green leafy vegetables would have done excellent, the selection was arbitrary. We added a little of brown rice with it, since we wanted some extra carbs for dinner.

- 6 oz kale
- 12 oz cucumber
- Golden beet dressing (no oil)
- Peel and slice the cucumber.
- Rinse and chop the kale.
- Make the golden beet dressing and season the vegetables with it.
